IAbout Chamisa Chocolate - From the Bean to the Bar
I buy beans from a company that sells organic or sustainably sourced cacao beans to small craft chocolate makers. Read about the beans I am using here.
I roast the beans in tiny batches to (neurotically) design the roasting levels for each type of bean.
Chamisa chocolate is made with organic ingredients as much as possible - some ingredients are not labeled "organic" but are from sustainable farms that don't use pesticides. All the chocolate is vegan.
Because the batches are so small I experiment a lot with ingredients and have discovered some wonderful flavor combinations. Read about some of the more unique ingredients here.
I strive to be a zero-waste business - nearly everything I bring in is made into chocolate or is reused, recycled or composted. The packaging (while slightly annoyingly crinkly) is made from the lactic acid in plants and is compostable.
