About Our Chocolate - From the Bean to the Bar
We buy our beans from a company that sells organic or sustainably sourced cacao beans to small craft chocolate makers. Read about the beans we are using here.
We roast the beans in tiny batches to (neurotically) design the roasting levels for each type of bean.
Our chocolate is made with organic ingredients as much as possible - some ingredients are not labeled "organic" but are from sustainable farms that don't use pesticides. All our chocolate is vegan.
Because our batches are so small we experiment a lot with ingredients and have discovered some wonderful flavor combinations. Read about some of our more unique ingredients here.
We strive to be a zero-waste business - everything we bring in is made into chocolate or is reused, recycled or composted. Our packaging (while slightly annoyingly crinkly) is made from the lactic acid in plants and is compostable.
We sell our chocolate at the Artisan Market in Santa Fe (NM) on Sundays and at Chocolate + Cashmere, on Palace Ave in Santa Fe. You can also buy it here online.
